Sweet Reward: Chocolate Chunk Muffins

Project 365 – #018 Sometimes, when you’ve been cleaning, purging, and organizing for some time, you need a little extra motivation to keep moving.  Today, Munchkin decided that she wanted something with chocolate, so I whipped up a batch of gluten free chocolate chunk muffins. The delicious aroma filled the house as we continued to sort through bags and boxes.  When the timer went off, I headed to the kitchen and pulled the muffins out of the oven.  After a short period of cooling off, we bit into the warm muffins.  Mmmm…. Project 365 #017 One of the things that I enjoy about living here in the Arizona desert is the beautiful winters.  Today, it was lovely outside – warm and sunny.  It was definitely shorts and t-shirt type weather.  We opened up the house and let the fresh air in.  Outside of the house, I found a few beautiful blossoms in our neighbors bush that just called to have their picture taken. Project 365 – #015 Munchkin really likes Hershey’s chocolate bars – no nuts – just chocolate.  For Christmas, she received a huge Hershey’s chocolate bar.  These are the last two pieces that remain.  Well, they did remain up until last night. lol!  She was very proud that she made that chocolate bar last for some time.  She even shared a few pieces with Daddy and a piece with me. I have never used Virgin Palm Oil in my cooking, so I was surprised when I saw the orange color of the solid oil. It is reddish/orange due to a high concentration of carotenes and tocols. It also has a unique flavor. I probably wouldn’t use it in delicate baking items as it would throw off the flavor, but for cooking, it was perfect. It has a high melting point and is shelf stable.
