Smoked Cheddar Chicken with Caramelized Onions We purchased some delicious raw smoked cheddar from Azure Standard, so I knew that I wanted to make a new dish to make good use of all of the flavor. 1 boneless, skinless chicken breast for each person 1 slice of smoked cheddar cheese for each piece of chicken 1/2 – 1 sweet yellow onion, sliced thin 1 Tbsp olive oil 2-3 Tbsp butter For this dish, I used a cast iron pan, but you can use whatever pan you have on hand.  The key is making sure the pan is smoking hot before…
