Crockpot BBQ Shredded Chicken Ingredients: 3 boneless skinless chicken breast gluten free bbq sauce rice, gluten free rolls (optional) Directions: Place frozen chicken breasts in crockpot.  Cook on high for 2-3 hours depending on crockpot. Remove chicken breasts and shred with fork.  Turn crockpot to low. Place shredded chicken in the crockpot with 1/4 – 1/2 C of your favorite gluten free bbq sauce. At 3:00 yesterday, Munchkin informs me that “tonight is 50s night at Awana, Mom!”  Oh, okay…  So, my mind begins to scramble and try to think what we can do for 50s night.  I go check my stash of fabric to see what I have available.  I decide to make a poodle skirt. Gluten Free Oatmeal Breakfast Bars Ingredients: 1/2 C butter, melted 1/2 C honey 1/2 C brown sugar 3 C gluten free oats (substitute Bob’s Red Mill Mighty Tasty GF Hot Cereal if you can’t do oats) 1 1/2 C buttermilk 1 Tbsp cinnamon (use less if you don’t like cinnamon as much as we do) 2 eggs, beaten 2 tsp vanilla extract 2 tsp baking powder 1 tsp salt 1 C raisins, dried fruit, chopped apples, nuts… (optional) Directions: The night before, combine butter, honey, sugar, gf oats, and buttermilk in a bowl.  Soak overnight.
