WW: Palm Canyon

  Palm Canyon is the most visited location within the Kofa National Wildlife Refuge as it is the last place in the state where native California palm trees grow in their natural habitat. Visitors can see around 100 trees along a narrow, southeast-facing ravine further up the canyon; they are quite well-hidden and only visible when close by. A half mile path – steep and uneven in places – leads along the canyon to a viewpoint below this patch of trees. Gluten Free Spaghetti, Meatballs, & Cheesy Garlic Bread

Munchkin really likes spaghetti and meatballs.  Add some cheesy garlic bread — well, then she’s just as happy as can be.  When I presented her with her with this platter, she just grinned and couldn’t wait to eat. Ingredients: 1 lb. ground turkey/chicken 2 Tbsp brown sugar 1/4 C gf rolled oats 3 Tbsp dried diced onion (or small fresh onion finely diced) 1 tsp dried oregano 1/2 tsp garlic powder 1-2 Tbsp ground flaxseed meal Directions: Preheat oven to 350 degrees Combine all ingredients until thoroughly mixed Roll into golf ball sized balls and placed in baking dish Cook…

90 Day Challenge: Day 25 Check-In

This week, I was able to stay on top of the reading.  There were a few nights where I really struggled to get the reading done because I was just so tired.  Some other nights, I found myself reading more than was scheduled. Munchkin continues to do her reading each evening.  Since she started a few days before me, she is ahead of schedule.  She thinks some of the passages are quite gruesome, and she’s absolutely right.  The Bible is point blank about many topics including the horrors of war, and the gruesome act of sacrifices. MathScore is an online math practice and assessment program for students between 1st grade and Algebra I developed by Steven Yang.  When Mr. Yang saw that many math educational software programs were heavy on the fun but light on the educational value, he set out to create a program that balanced learning and motivational fun.
