Bible Study/Devotions: In the morning, I am reading the Daily Bread devotionals. In the evening, I am going to start doing a journal/prayer journal. Munchkin will be continuing with her Keys for Kids devotions. She is also doing her Frontline Kids “workbook” for Wednesday night program. Must Do List: I need to send out a package for my beloved. Gluten Free Tortilla Crusted Chicken Nuggets

Munchkin has really missed chicken nuggets, so I needed to find a fast, easy recipe to satisfy her craving… Ingredients:6 oz of your favorite tortilla chips (zesty is good for more flavor)1/2 C grated Parmesan cheese1 egg1 1/2 lbs of skinless, boneless chicken (cut into pieces) Directions: 1. Preheat oven to 400 degrees.2. Crush tortilla chips until coarsely ground (can put in food processor)3. Combine with Parmesan cheese4. In a different bowl, beat egg with 1 tsp water (or milk)5. Growing up, my mom would make us this delicious meal. She never had a recipe, so I had to go hunting for something that was similar to her recipe. With a little tweaking, I turned that recipe into a yummy gluten free treat. Ingredients:3/4 C gluten free pancake mix1/2 tsp salt1 Tbsp sugar4 eggs3/4 C milk1/4 C butter4 medium to large apples (thinly sliced) Topping:1/3 C sugar1 tsp cinnamon Directions: 1. Today, we stopped by one of our local Walgreens to take advantage of some of their sales and pick up some digital prints. Well, we found the Elmer’s Go Paint on their clearance table for $1. I thought it would be something fun for Munchkin to try out this afternoon. It turns out it’s a great product. The pre-filled paint brushes can only be used on their paper, so there is no need to worry about a mess while they’re painting. The set comes with 4 paint colors and a pad of paper (32 blank pages).
