Favorite Ingredients Friday: St Patrick’s Day Edition

Yes, I am quite late in posting this. For that I am truly sorry. It was a busy day, but I do have a couple of fun recipes that I found at Family Fun. I love all the kid-friendly ideas they have at the site.

We’ll start off the day with a lovely batch of green pancakes. No, they’re not moldy. Just add a few drops of food coloring into your favorite pancake recipe.

To keep snack time simple, you could make shamrock shaped rice-krispie treats, a pot of gold, or a shamrock pretzel.

Pot of Gold Jello

RECIPE INGREDIENTS:
3-ounce box of lemon-flavor gelatin
6 limes
Sugar
1 teaspoon of whipped cream

DIRECTIONS:
1. Line an 8-inch square baking dish with plastic wrap, leaving several inches of overhang on each side (this will make removing the gelatin easier). Combine a 3-ounce box of lemon-flavor gelatin and 1 cup of boiling water in a medium bowl, stirring until the gelatin is dissolved. Stir in 1 cup of cold water, then pour the mixture into the baking dish. Cover the dish with plastic wrap and chill the gelatin for 4 hours or until firm, then slice the gelatin into 1/2-inch cubes.

2. Cut off the top quarter of each of 6 limes, then, without cutting into the fruit, slice a thin layer of peel from the bottom of each one to help them stand upright. With a small knife, cut around the inside of each lime’s rind to loosen the pulp, then spoon it out to make a shell.

3. Place a pinch of sugar and 1 teaspoon of whipped cream in the bottom of each shell, then fill each lime pot with gelatin gold. Makes 6.

Sweet Shamrock Pretzels

RECIPE INGREDIENTS:
Canned refrigerated bread stick dough (we used Pillsbury Original Breadsticks)
Colored sugar
Cinnamon

DIRECTIONS:

1. Line a cookie sheet with aluminum foil and lightly coat it with cooking spray.

2. To create the clover shape, mold 3 sections of bread sticks into hearts and press them together as shown. Attach a small stem, decorate, bake according to the package directions, and serve them up to your lucky guests.

I have personally made both of these and they were a hit. I have a great recipe for homemade pretzel dough that I wanted to share, but I don’t have my recipe book with me. I’ll have to post that another day.

    Better late than never, I always say! I love the Pot of Gold Jello idea! I’m going to have to make that with Snuggle Bug! And I love the Family Fun website too!
