Meal Plan Monday

Posted in Homemaking

Wow! I can’t believe it’s Monday already. Last week flew by with everything that was happening. I’m not overly organized **sigh** this week, so we’ll be going mainly with some old stand-bys.

1. BBQ Chicken with veggies
2. Pasta w/marinara sauce & fresh bread
3. Chicken and rice
4. Breakfast for supper
5. Quasedillas with veggies
6. Chicken, potato, corn bowl
7. Hot dogs or hamburgers with french fries
Anyway, sorry for running late this morning. We were having power issues yesterday. The snow caused some trees to fall on the power lines. Brr!!!

How do you make your chicken and rice? I always learning different ways of making it since it seems that no two people make it the same. I cheat with mine, using a box of Rice A’ Roni Chicken Flavored, canned chicken and corn. It’s easy, simple and flavorful. It’s something I’ve been making since about age 10 and I can’t get enough of it. But, then I also love alternate versions.

    Great menu!

In all honesty, this is one meal that my hubby makes. We use the rice cooker, so we use whatever rice we have on hand. Lately, he’s been enjoying chicken with sweet & sour sauce on top. (My daughter and I eat plain chicken). I don’t think it’s the same twice. lol!

I love bbq chicken, and always forget to make it. We do chicken and rice but it has sliced almonds and water chesnuts. I love that stuff!
    Have a great week!

jennyr, what I do is layer mashed potatoes, chicken, and corn in a bowl. 🙂 Sometimes we add other things as well. It’s a hearty meal in one bowl — nothing too exciting. 😉

Your menu sounds yummy. Good luck with your move. It is great that you are planning your meals during a stressful time–it should help out.
