A few months ago I heard rumors of a gluten free Bisquick. I kept looking in my local grocery stores, but I never saw it. It was available online, but I tend to like to purchase locally when I’m trying something for the first time. Yes, I’m weird like that. Anyway, I was more than thrilled to be given the opportunity to try out the new gluten free Bisquick. Many ideas filled my mind as I tried to decide what I wanted to create.
Then, it hit me. I want to try to create funnel cakes. It has been years since we’ve had those delicious treats, so that would be my first creation with the gluten free Bisquick. The package I received included a pancake pen (bottle for batter) which made creation of the funnel cakes much easier.
You can see my recipe for the funnel cakes here. The funnel cakes turned out wonderfully. They were a hit with both the gluten free peeps and the glutenous peeps in my life. Munchkin and her friends eagerly gobbled up the tasty treats. So, I knew that the Bisquick could be used to created delicious funnel cakes. Now, I needed to see how the mix did to create pancakes.
Using the cast iron silver dollar pancake pan, I made some tasty gluten free pancakes. The pancake pen made filling the silver dollar pan extremely easy. I found that I needed to add more milk than the Bisquick mix called for to make the batter the correct consistency for pancakes.
The pancakes were dubbed delicious by Munchkin who quickly ate her short stack and asked for more. While the pancakes were not super fluffy, they also were not dense. It was a nice medium ground for the pancakes.

I have had to swap to a gluten free diet recently and am missing the soft, fresh bread. And cinnamon rolls. And fettucini alfredo.
