Smoked Cheddar Chicken with Caramelized Onions

We purchased some delicious raw smoked cheddar from Azure Standard, so I knew that I wanted to make a new dish to make good use of all of the flavor.

  • 1 boneless, skinless chicken breast for each person
  • 1 slice of smoked cheddar cheese for each piece of chicken
  • 1/2 – 1 sweet yellow onion, sliced thin
  • 1 Tbsp olive oil
  • 2-3 Tbsp butter

For this dish, I used a cast iron pan, but you can use whatever pan you have on hand.  The key is making sure the pan is smoking hot before putting the chicken in the pan.

  1. Put pan on stove and put enough olive oil in it to lightly coat the bottom of the pan to prevent sticking.  Heat until pan is smoking slightly.
  2. Carefully place chicken breasts in pan.  Cook on each side until the chicken is browned on each side.  Turn down the heat to medium-low and cover.  Cook until internal temperature of chicken reaches 155-160.
  3. Once chicken is cooked, remove from pan.  Turn heat to low.  Add butter to the same pan to get the full flavor of the cooked chicken.
  4. While butter is melting, place chicken in a casserole dish.  Put a slice of smoked cheddar cheese on each piece of chicken.  Place casserole dish under broiler until cheese is hot and bubbly.  Remove from oven.
  5. Add onions to the pan and cook until they are caramelized.
  6. Place the onions on top of the chicken breasts and serve with your favorite veggies.
