One Sunday evening, I needed to come up with a quick, easy meal for us. Since we were low on groceries, I looked around to see what was available, and this is what I came up with for dinner.

All you need is one 13 oz can of chicken breast, one 8 oz package of cream cheese, one cup of shredded pepper jack cheese (or other cheese of your choice), and one cup of sour cream.  Mix all ingredients together (reserving about 1/4 cup of shredded cheese).  Place in baking dish and top with reserved cheese.  Bake at 350 degrees F for 30 minutes or until hot and bubbly.  Top with chives if desired.

I served this with thin toasted slices of gluten free bread.  If you want a skip the meat, you can replace the chicken with garbanzo beans.  Just mash the beans until they are slightly chunky (or smooth if you prefer).  It makes a great meatless dish.
