Frozen Banana Treats

Project 365 – #130 What do you do with 36 pounds of bananas?  Well, you let your little monkey eat her share.  Then mommy and daddy eat a bunch or two.  You make a few fruit salads.  Finally, you start slicing up the bananas and freeze them on a cooking sheet.  Once they’re frozen, you toss them in a ziploc bag or into a freezer container.  Now, they’re ready for yummy smoothies or chocolate banana pops.  Yum!  Perfect treats for those hot summer days. Pancakes for Lunch

Project 365 – #129 Today, D decided that he really wanted some gluten free pancakes for breakfast.  Well, the problem was that it was almost lunch time before he woke up.  (The pain meds tend to make him rather sleepy in the morning.)  I told him that I would be happy to make him some pancakes for lunch.  In our Bountiful Baskets this week, we had some delicious organic apples that I decided to dice and add to the pancake mix.  To round out the pancakes, I added some cinnamon. Project 365 – #127 Today, I picked up our new Bountiful Baskets.  They were filled with all kinds of delicious fruits and veggies. It’s so much fun opening our organic box to see what goodies it holds for us.  We were thrilled to see some honey dew, kiwi, and pineapple this week.  What a yummy treat. Pizza Night

Project 365 – #125 D and Munchkin felt like having pizza tonight, so I pulled out some frozen Udi’s gluten free pizza crusts to make some quick pizzas.  Munchkin wanted just cheese.  She did end up throwing on some tomatoes after the pizza was cooked.  D had a turkey, mushroom, and onion pizza.  I had a fresh herb and tomato pizza.  Yum!

Bountiful Baskets

Project 365 – #113 Yum!  We picked up our first Bountiful Basket order this morning.  All of the veggies and fruit look so delicious.  We’ll definitely be enjoying them this weekend.  In addition to the regular order, we also ordered a case of bananas.  We’ll eat quite a few now and I’ll freeze more for smoothies later. We’re heading out to a local lake to go fishing, so I really need to get moving.  Have a blessed Easter weekend!
