Gluten Free Peanut Butter Fudge Brownies

Posted in Gluten Free, Homemaking, and Photography

Project 365 – #164 We received some gluten free mixes from Betty Crocker as part of the Gluten Freely Bakers Challenge that a wrote about last month, so I decided to doctor up one of the brownie mixes.  With the gluten free Betty Crocker brownie mix, you need to up the butter to between 3/4 cup and 1 cup if you want a nice fudgie brownie.  (The recipe on the box calls for 1/2 cup.)  Other than that, make the mix as directed and put in greased pan. Next, plop little dollops of peanut butter all over the brownie mixture. …

The Fragrance of Christ

Posted in Christian Life, and Photography

Project 365 – #163 But thanks be to God, who in Christ always leads us in triumphal procession, and through us spreads the fragrance of the knowledge of him everywhere. For we are the aroma of Christ to God among those who are being saved and among those who are perishing, to one a fragrance from death to death, to the other a fragrance from life to life. Who is sufficient for these things? For we are not, like so many, peddlers of God’s word, but as men of sincerity, as commissioned by God, in the sight of God we…

Tasty Chicken Fajitas

Posted in Gluten Free, Homemaking, and Photography

Project 365 – #162 I love the aroma of peppers and onions cooking in a cast iron skillet.  Add in the sizzle of perfectly seasoned chicken breast…  Soon I hear a call from the living room, “Something smells really good!”  Mmm… While I love the ease of my confetti fajitas done in either the oven or crockpot, nothing can really beat fajitas cooked in a cast iron skillet.  The flavor is completely different. Start with some freshly diced peppers and onions.  I like to use multiple colors of peppers just because it looks nice.  I happened to have both yellow…

All Things Great and Small

Project 365 – #161 Isn’t it wonderful how the Lord is concerned about even the tiny details in our lives?  Today, I needed to find some things for the guinea pigs, so I could make some bedding.  (The shredded paper and other bedding is not working for us, so I needed to do something that would work better.)  I found out that Uhaul blankets with fleece over top work really well as cage liners.  I headed over to Uhaul, and once I told the gentleman why I was purchasing the blankets, he offered to give me a couple of used…

Introducing Rosita the Guinea Pig

Posted in Family, and Photography

Project 365 – #160 Guinea pigs are highly social animals, so they do best when there are at least two of them together.  When Munchkin adopted Choco, there was only one guinea pig, so we’ve been watching local boards waiting to see if any guinea pigs came up for adoption.  Yesterday, a girl from 4-H posted on craigslist that she had guinea pigs that needed a new home. We emailed back and forth for some time.  She offered to bring the piggies for Munchkin to examine.  We came home with Rosita.  That little tuft of white fur called out to…
