Tropical Traditions Coconut Cream Giveaway

Posted in Gluten Free, and Reviews

Coconut Cream Concentrate is pure organic coconut meat that is finely ground into a creamy consistency.  Unlike many of the other Tropical Traditions coconut oil products, the coconut cream concentrate is a food rather than a cooking oil.  You can use it in baked goods, in smoothies, or just smear it on some toast.  You can even make your own coconut milk! My favorite way to enjoy it?  Definitely smeared on some gluten free toast or a gluten free bagel.  Absolutely delicious.  It melts into the nooks and crannies and provides a yummy flavor.  It would be great for those…

Our Organic Journey

Project 365 – #080 It seems odd to be talking about our organic journey as we are definitely still in the infant stages – at least, that’s how it feels to me.  Our organic journey really started about the same time that we went gluten free.  It was at this time that I really became aware of everything that was in our every day foods.  Plus, Munchkin was getting older which lead me to think about all the different health issues I had at a younger age.  I began to wonder if making changes in our diet could help with…

When I was asked if I would like to try out Crunchy N Yummy snacks, I jumped at the opportunity.  After all, they were certified organic, freeze-dried fruit!  These snacks sounded…

Gluten Free Carrot Cake Cupcakes

Posted in Gluten Free, Homemaking, and Photography

Project 365 – #078 On Sunday afternoon, we’re heading over to a birthday party.  Since I prefer Munchkin doesn’t have to do without a tasty cupcake when the other kiddos are eating their birthday cake/cupcakes, I made some gluten free cupcakes to take with us. We had picked up a Simply Organic Gluten Free Carrot Cake mix at some point the last few months, and it’s been sitting in the pantry waiting to be used.  I thought this would be a great time to make Munchkin’s favorite type of cake. Last time I used the mix, I found that the…
