Ingredients
  • 2 pounds boneless, skinless chicken tenderloins
  • 1 cup tapioca flour
  • 1 cup grated Parmesan cheese
  • ¼ tsp. garlic powder
  • 1 tsp. oregano
  • 1 tsp. basil
  • salt
  • pepper
  • 2 eggs
Instructions
  1. In a medium bowl, combine tapioca flour, Parmesan cheese, garlic powder, oregano, basil, salt, and pepper.
  2. In a small bowl, beat the eggs.
  3. Preheat oil to 360 degrees F.
  4. Dredge chicken through flour mixture, egg, and then flour again.
  5. Carefully drop in oil and cook for 10 minutes or until cooked thoroughly.
