Gluten Free Fried Chicken

- 2 pounds boneless, skinless chicken tenderloins
- 1 cup tapioca flour
- 1 cup grated Parmesan cheese
- ¼ tsp. garlic powder
- 1 tsp. oregano
- 1 tsp. basil
- salt
- pepper
- 2 eggs
- In a medium bowl, combine tapioca flour, Parmesan cheese, garlic powder, oregano, basil, salt, and pepper.
- In a small bowl, beat the eggs.
- Preheat oil to 360 degrees F.
- Dredge chicken through flour mixture, egg, and then flour again.
- Carefully drop in oil and cook for 10 minutes or until cooked thoroughly.
