Baked Swai Over Brown Rice
 
 
Baked Swai served over brown rice is a light summer dish that can be customized with your favorite seasonings.

Ingredients
  • 1 boneless, skinless Swai filet for each person
  • small pat of butter for each filet
  • 1 - 2 Tbsp. lemon juice
  • seasoning
Instructions
  1. Preheat oven to 350 degrees F.
  2. Lightly spray baking dish with olive oil.
  3. Place fillets in a single layer in baking dish.
  4. Season both sides of the fillets.
  5. Place a small pat of butter on each filet.
  6. Pour lemon juice around (not over) the fillets.
  7. Bake for 12-15 minutes until the fillets are opaque.
  8. If you want a more crisp exterior, place the fillets under the broiler for around 2 minutes.
  9. Serve over a bed of brown rice.
