Prep Ahead Meal Plan: Chicken

Posted in Gluten Free, Homemaking, and Photography

Project 365 – #134 Have you ever uttered a phrase similar to this: “I bought all of this great food, but we ended up eating out all week due to life”.  I think it’s fairly safe to say that most people have had this happen to them at least once.  You go grocery shopping and pick up all of this fabulous food.  You’ve got wonderful plans for all of the beautiful, healthy meals for the week.  Then life happens and you end up eating take out or junk food.  Your meal plan goes out the window because there isn’t enough…

The Epic Cream Sauce Failure

Posted in Gluten Free, Homemaking, and Photography

Project 365 – #133 Okay, so that’s a slight exaggeration, but it was a time consuming failure.  Let me step back in time for a moment… This evening, I decided that I’d make some Mexican chicken with a lovely cream sauce served with peas.  I put the cast iron skillet on the burner to get it nice and hot as I wanted a nice sear on the chicken.  As I waited for the pan to heat up, I started dicing onions and green peppers.  The boneless, skinless chicken breasts sizzled as I placed them into the hot skillet.  I turned…

Project 365 – #132 Yes, I’ve been writing a good bit about food lately, but I’ve been rather tired and food is a constant in our life.  **wink**  On days when I have headaches, like today, I like to go with simple meals.  One of our easy go-to meals is nachos.  Since we had lots of veggies on hand, I decided to load up the nachos with lettuce, tomatoes, onions, and green peppers.  They were very tasty, and both Munchkin and D enjoyed their meals.  I was happy because I was able to provide a good meal with minimal work…

Popcorn and a Movie

Posted in Family, Gluten Free, and Photography

Project 365 – #131 We love to have family movie night.  Nothing seems to shout movie night like a bowl or two of popcorn.  We like to get the natural popcorn and add our own butter and salt.  Sometimes, we’ll add a little parmesan cheese to the mix.  Every now and then, I’ll make up a mock caramel corn.  Yum! We decided that tonight would be family movie night.  While D and Munchkin finished playing some Scooby Doo on the Wii, I got the popcorn ready.  Once the light, fluffy, buttery popcorn was ready, we popped in The Game Plan…

Frozen Banana Treats

Posted in Gluten Free, Homemaking, and Photography

Project 365 – #130 What do you do with 36 pounds of bananas?  Well, you let your little monkey eat her share.  Then mommy and daddy eat a bunch or two.  You make a few fruit salads.  Finally, you start slicing up the bananas and freeze them on a cooking sheet.  Once they’re frozen, you toss them in a ziploc bag or into a freezer container.  Now, they’re ready for yummy smoothies or chocolate banana pops.  Yum!  Perfect treats for those hot summer days. For those warm winter months, the frozen bananas can be thawed and mashed as needed to…
