Project 365 – #165 Every now and then, it’s fun to make your own potato chips. I’m fortunate to have an electric food slicer which makes slicing the potatoes rather quick, but you can also slice them on a grater or mandolin. I like to drop them in our deep fryer, but you can also bake them in the oven, if preferred. Last night, I served them with some homemade turkey burgers. I put cheese in Munchkin’s burger. Project 365 – #164 We received some gluten free mixes from Betty Crocker as part of the Gluten Freely Bakers Challenge that a wrote about last month, so I decided to doctor up one of the brownie mixes. With the gluten free Betty Crocker brownie mix, you need to up the butter to between 3/4 cup and 1 cup if you want a nice fudgie brownie. (The recipe on the box calls for 1/2 cup.) Project 365 – #162 I love the aroma of peppers and onions cooking in a cast iron skillet. Add in the sizzle of perfectly seasoned chicken breast… Soon I hear a call from the living room, “Something smells really good!” Mmm… While I love the ease of my confetti fajitas done in either the oven or crockpot, nothing can really beat fajitas cooked in a cast iron skillet.
