Delicious, Family-Friendly Low Sodium Meals

When we head out camping, we normally have very little space for storage of food and seasonings.  We love lots of flavor in our foods, and we don’t want to give up flavor even though we’re camping.  To make things easy, D likes to take his “all purpose” seasoning, Mrs. Dash Garlic and Herb, with us.  It works for chicken, steak, eggs…  It gives that punch of flavor that we like without needing lots of different seasonings.

For those who are watching their salt intake, Mrs. Dash makes a nice substitute because it is salt-free.  You don’t feel like you’re sacrificing any flavor.  Many salt-free dishes tend to taste a bit flat, but that isn’t the case when you use Mrs. Dash.

One thing that we like to do while out camping is making our Hobo meals.  We create a packet from aluminum foil and place in it our preferred meat (chicken or beef depending on who you talk to in our family), potatoes, and whatever veggies we have on hand.  It’s nice because each person can personalize their meal based upon their own food preferences.  We drizzle a little olive oil over top and sprinkle generously with our Mrs. Dash Garlic & Herb seasoning. We seal up the foil packet and throw on the fire.  The outside of the packet turns black and the delicious smell of cooking hobo meal fills the air.  Mmmm….  D carefully removes the packets from the fire and checks to make sure they are thoroughly cooked.  Yum, a fresh cooked, flavor-filled meal over an open campfire.

The next morning, it’s time for scrambled eggs, bacon, and fried potatoes.  D cooks up the turkey bacon first.  He allows the bacon fat to season the griddle.  (Obviously, if you really need to be careful about your sodium intake, you’ll probably want to skip the bacon even if it is turkey bacon.)  Next, he tosses in the chopped up onions and potatoes.  He sprinkles on some of the Mrs. Dash seasoning to give it an extra punch of flavor.  The smell of the bacon and the frying potatoes permeate the air.  When the potatoes finish cooking, he quickly cooks up some scrambled eggs.  He adds some Mrs. Dash Garlic & Herb seasoning to the scrambled egg mixture.  I chop up some fresh tomato to place on top of the eggs to add some fresh, light flavor to the dish.  A nice hearty breakfast to begin a day filled with hiking and exploration.

  1. We love making “hobo burgers” when we go camping. It’s so simple and does not take much effort. Another great thing to make with them, also done in the foil “packets” is take a potato – cut into strips (sort of like steak fries), then add butter, seasonings (we use garlic powder), as well as onion & green pepper strips. Just put them in the fire before the burgers, as depending on the thickness of your potatos it may take longer.

    • Yum, that sounds like another delicious variety. 🙂

      We’ve only taken out the camper once, and it was good with a few issues. Those have been taken care of minus one which will be taken care of next week. Next week, we’ll be taking our first trip were we’ll be hooked up at a campground. Last time, we were dry camping. We’re really looking forward to it!
