Spicy Crockpot Chicken Soup

Posted in Gluten Free

D has been on a soft foods diet for nearly a week now, so I’ve needed to come up with meals that don’t heat up the house and work for his restricted diet. I made a less spicy version of this soup for my mother-in-law and father-in-law when they were visiting by not including the cayenne pepper and reducing the amount of fresh ground pepper. It’s pretty easy to adjust to your family’s taste preference by adding or subtracting ingredients. If you want a more spicy version, just toss in some of your favorite spicy peppers. I like to eat…

Turkey Tortilla Soup with Canning Instructions

I always like to take advantage of sales on turkeys during the holidays. Although we had some craziness with our Thanksgiving turkey due to UPS not delivering the turkey in a timely manner, I did end up making extra turkey later on which meant that I had some leftover turkey to use. Chicken tortilla soup is a hit around here, so I decided to substitute turkey into the recipe and make sure it was safe for canning. While we like the soup, we didn’t want to eat it all at once. This recipe can easily be made in the crockpot,…

The weather is getting cooler, so it’s time to start making soups and stews. Since I have a pressure canner this year, I am able to can our stew for use later without having to freeze it. This means that it’s easy for Daddy to grab a jar of stew, warm it up, and put it in a thermos to eat for lunch. Making beef stew at home means you can control the quality and quantity of the ingredients. This beef stew recipe was a hit with my family, and it includes canning instructions for shelf-stable storage using a pressure…

Crockpot Chicken Taco Soup

Crockpot Chicken Taco Soup This simple dish has quickly become a favorite around our house. The original idea came from our neighbor. A few quick modifications lead to this version. This is not an overly spicy dish. If you want more heat, just add more chilies and/or seasoning. You could easily add some seasonal veggies to add more flavor/color. Ingredients: 3 boneless, skinless chicken breasts 3 cans diced tomatoes 1 can corn 1 can kidney beans 1 can black beans 1 can diced green chilies 2 Tbsp taco seasoning cheese (optional) sour cream (optional) tortilla chips or flat bread (optional)…
