Recently, Munchkin discovered that she really likes Kiwi fruit.  It makes a delicious easy snack in the afternoons.  I’ve enjoyed Kiwi for as long as I can remember.  I like the tart, not-quite-ripe Kiwi as well as the sweet, very ripe Kiwi.  I remember enjoying these special treats when I was a child.  Munchkin wasn’t sold on them until this week.  I sliced up a few for my after lunch snack, and she asked to try one.  She took her first bite and promptly asked if she could have more.  Before I knew it, the plate was gone.  She’s now…

Crispy Rice Baskets for Easter

These start off with the traditional recipe – 3 Tbsp butter, 1 package large marshmallows, and 6 cups rice cereal (I used gluten free Koala Crisp cereal – chocolate crispy rice). Prepare as usual – melt butter over low heat until melted, stir in marshmallows until completely melted, remove from heat and add cereal, stir until cereal is completely mixed in. Grease some muffin tins (I greased with coconut oil) and add cereal mixture.  Make a well in the top, so you can “fill” the basket. Peanut Butter Oatmeal Bars Ingredients: 1 cup gluten-free flour 1 cup gluten free oats 2/3 cup brown sugar 1/4 teaspoon baking soda 1/2 cup butter 1 cup peanut butter Directions: In a mixing bowl combine gluten free flour, gluten free oats, brown sugar and baking soda. Cut in butter till mixture resembles coarse crumbs. Reserve 1 cup of the flour mixture. Press remaining flour mixture into the bottom of an ungreased 8×8 pan. Spread with peanut butter.
