Crockpot Chicken Taco Soup This simple dish has quickly become a favorite around our house. The original idea came from our neighbor. A few quick modifications lead to this version. This is not an overly spicy dish. If you want more heat, just add more chilies and/or seasoning. You could easily add some seasonal veggies to add more flavor/color. Cheesy Salsa Crockpot Chicken Ingredients:3 Boneless Skinless Chicken Breasts1 C Salsa1/2 – 1 C Shredded Cheese1 tsp chives Directions:1. Place chicken breasts at the bottom of crockpot.2. Pour salsa over top of chicken breasts.3. Cook on low for 4-5 hours.4. 30 minutes prior to serving, sprinkle cheese on top of chicken breasts.5. Once cheese is melted, sprinkle chives on top of cheese.6. Serve with sour cream and extra salsa (if desired) This also tastes good served over rice.

Taco Meat This recipe is based on Sue Gregg’s Taco Chip Ole. We have added this recipe to our normal rotation. The meat heats up well for use later in the week. We use this meat for both nachos and tacos. Ingredients: 1 lb. ground turkey1/4 cup diced onions1 can diced tomatoes2 Tbsp. taco seasoning 1) Brown turkey.
