I was in the mood for something different and light for dinner tonight. Since I just made a new batch of salsa, I decided that I wanted to do something with chicken and salsa. Here’s what I came up with: Summer Wraps Ingredients: Romaine LettuceFresh Summer SalsaFried or Grilled ChickenRanch DressingShredded Cheese Directions: Lay down romaine lettuce leaves (whole leaves) on the plate. Freezer Lasagna Ingredients: 1 1/2 pound lean ground beef OR Italian sausage OR mix 1 onion, chopped OR 1/2 cup celery, chopped 2 cloves crushed garlic 1 large can tomato sauce 1-6 oz. can tomato paste salt to taste 2 tsp. dried Italian spice 1-12 oz. carton ricotta 2 eggs mixed with 1 tablespoon extra virgin olive oil 1 tablespoon dried parsley 1/2 cup grated Parmesan cheese 10-12 oz. gluten free lasagna noodles, uncooked 3 cups (12 oz.) shredded mozzarella cheese Directions: 1. Now these aren’t truly popovers, but it’s what we’ve always called them. This is something that I came up with when my husband and I were first married, and they were a hit. Ingredients: 2 Chicken breasts (once again, you can use your favorite cut)2 pats of butterItalian seasoningSaltPepper Directions: 1. Favorite Ingredient Friday: Popcorn Chicken

I was requested to post the recipe for the popcorn chicken that I listed on my menu for Menu Plan Monday. So here it is (this is for 2-3 people): 2-3 Raw, Chopped Chicken Breasts (can use other cuts if you prefer) 1/2 C bread crumbs (for gluten free – use crushed gf tortilla chips) 1 tsp Italian seasoning 1/4 C grated Parmesan cheese Put ingredients in Ziploc baggy and toss until coated. This can also be made in the crockpot for those days that you’re on the go and want to have a delicious dish to come home to.
