Flourless Smore Cookies

Posted in Gluten Free

Fall is here which means I can turn on the oven without feeling like we’re roasting in the house. I decided to play around with my basic flourless peanut butter cookie recipe to create flourless smore cookies. I was craving the taste of smores. Since we couldn’t have an open fire and roast smores, this seemed like a good alternative. Cooler weather calls out for hot, fresh baked goods, and these tasty cookies are easy to make and delicious. They are gluten free and dairy-free. You can use sunbutter if you need a nut-free alternative. This recipe is kid-friendly and approved.…

Gluten Free Snowball Cookies

Posted in Gluten Free, and Homemaking

Growing up, we had these every year at Christmas. Sometimes it was at Grandma and Grandpa’s house while at others it was at church potlucks. Either way, we seemed to always snack on these. There are many different methods for making these including adding nuts or chocolate chips to the dough or even placing a cherry in the middle of the ball. These are also known as Mexican Wedding Cakes, Swedish Teacakes, Russian Teacakes…. This was my first attempt at making them gluten free, and I was pleased with the results. Gluten Free Frosted Sugar Cookies

Posted in Gluten Free, and Homemaking

It’s almost Christmas which means it’s time to start making sugar cookies. I’m constantly tweaking my own recipes to come up with “the best” sugar cookie. For me, a great sugar cookie means that it’s moist and slightly chewy. I want something that reminds me of the frosted sugar cookies that were brought to pretty much every potlock that we had at church growing up. They had that melt-in-your-mouth-oh-so-good quality that couldn’t be beaten. Yes, some very good memories of the ladies who were known for not only their sweet dispositions but also their sweet treats. Gluten Free Sugar Cookie…

Cranberry Macadamia Nut White Chocolates

Posted in Gluten Free, Holidays, and Homemaking

I admit that I have a fondness for white chocolate even though I know it’s not the healthiest of treats. I rarely eat it which makes these treats extra special. I found some white chocolate chips inexpensively on Saturday, so I snagged a couple of bags. I decided to make these treats with some leftover dried cranberries and macadamia nuts that I had on hand. The measurements are approximate as I just added ingredients until I liked the results. Ingredients: 2 cups white chocolate chips 1/2 – 1 cup dried cranberries 1/2 – 1 cup chopped macadamia nuts 1/2 tsp.…

Yep, I totally made that name up. lol!
