Gluten Free Oatmeal Raisin Cookies

Posted in Gluten Free

I’ll be the first to admit that cookies are a real weakness for me. The store bought cookies aren’t as tempting, but cookies fresh from the oven… Those cookies can’t be beat. Lately, I’ve been craving some of my gluten free oatmeal raisin cookies, but it’s been so busy around here that I’m just now getting around to baking them. I had originally planned on baking a batch of the cookies for my family and another batch or two for the Marines as a Christmas gift, but I that didn’t happen. Instead, at the last minute, I made 3 pans…

Gluten Free Carrot Cake Cupcakes with Honey Cream Cheese Frosting

Posted in Gluten Free

Munchkin loves carrot cake, so I’ve been working on creating a moist gluten free carrot cake with a healthy cream cheese frosting. These cupcakes are super moist. The frosting is not overly sweet, but can easily be made sweeter by adding a little more honey. Crispy Oatmeal Chocolate Chip Cookies

Munchkin really wanted to have chocolate chip cookies last night, so I started throwing together some ingredients as I wanted to try something different. I mixed and combined until I arrived with a dough texture that I liked. I decided to go with a larger cookie scoop to make big cookies. The result was oatmeal flavored crispy chocolate chip cookie with a soft inside. They were easy to make and a hit. Munchkin decided they tasted like a cross between chocolate chip cookies and granola bars. I plan on trying these with dried fruit and nuts. I may even try…

YumUniverse Gluten Free Walnut Chocolate Chip Cookie Recipe

Posted in Gluten Free

Special thanks to the publishers of YumUniverse for allowing me to share this recipe from the book. I love a good cookie and a healthy cookie that tastes great is even better. I didn’t have any walnuts in the house, so I chose to use pecans instead. The results were delicious. I used some soy-free chocolate chips rather than the recommended vegan chocolate chips. While making the cookies, I found that it was better to allow the cookie dough to rest before baking them. I ended up adding more mix-ins in the second batch to create more of a hearty…

Gluten Free Peach Crisp

Posted in Gluten Free, and Homemaking

Yes, we have lots of peaches and other stone fruit right now here in CA. We’ve been enjoying delicious peaches from both our local co-op and our CSA. I love that they are a naturally sweet, refreshing treat. Daddy really likes crisps/cobblers, so I thought it would be nice to make him a twist on a traditional peach crisp. As usual, I sort of winged it when it came to ingredients, so the measurements listed below are approximate. I like my peaches a little firm, so I don’t cook my crisp as long. If the topping doesn’t crisp up quite…
