Gluten Free Sugar Cookie Recipe

Posted in Gluten Free

I was in the mood for some sugar cookies, but I didn’t have all of my normal sugar cookie ingredients. I decided to wing it and started throwing things together. The result was a light, thin cookie that had a crisp exterior and chewy interior. The cookies were a big hit, and they disappeared very quickly. Unfortunately, I forgot to write down all the substitutions that I made, so I was then tasked with trying to recreate the cookie. This recipe is pretty close to the original recipe that I pieced together. Munchkin wanted to try these with a little…

Crispy Oatmeal Chocolate Chip Cookies

Munchkin really wanted to have chocolate chip cookies last night, so I started throwing together some ingredients as I wanted to try something different. The result was oatmeal flavored crispy chocolate chip cookie with a soft inside. They were easy to make and a hit. Munchkin decided they tasted like a cross between chocolate chip cookies and granola bars. I plan on trying these with dried fruit and nuts. I may even try…

These are also known as Mexican Wedding Cakes, Swedish Teacakes, Russian Teacakes…. This was my first attempt at making them gluten free, and I was pleased with the results. For me, a great sugar cookie means that it’s moist and slightly chewy. I want something that reminds me of the frosted sugar cookies that were brought to pretty much every potlock that we had at church growing up. They had that melt-in-your-mouth-oh-so-good quality that couldn’t be beaten. Yes, some very good memories of the ladies who were known for not only their sweet dispositions but also their sweet treats. Gluten Free Sugar Cookie…

Flourless Peanut Butter Chocolate Chip Cookies

Posted in Gluten Free, Homemaking, and Photography

These large flourless peanut butter chocolate chip cookies are easy to make as the ingredient list is short. Kids will have fun helping make these naturally gluten free cookies. Plus, there is something fun about having giant cookies. This recipe makes roughly 18 large cookies. You can use m&ms if you want to add more playfulness and color to the cookies. For adults, add in some chopped nuts and chocolate chunks instead of just using chocolate chips. If you use natural peanut butter, you may find that you need to add a little extra oil like coconut oil. I like to…
