WFMW: Cooking Ingredient Prep

In order to make my nightly cooking easier, I try to do most of the prep work ahead of time.

I buy most our of meat in bulk when it’s on sale.  Once I get it home, I divide the meat into dish size portions.

I’d love to say that I got all of my Once A Month Cooking done as planned, but things changed ~ adjustments were made.  The main thing is that we have a freezer with lots of good eats, and we ate well during the process.

In the Kitchen: OAMC Part 1

My March Once A Month Cooking (OAMC) has begun.  I do mine a little differently than many people.  I tend to get things done over a series of several days.

What I’ve done so far:

25 lbs of boneless, skinless chicken breasts have been vacuum sealed and placed in freezer.  (half with seasoning, half without)

Frozen Assets: Calzones

These calzones can be made ahead of time and individually frozen. If you do not want to make your own bread for the calzones, just use some frozen bread dough from the store.

Ingredients:

2 Tbsp yeast2 C warm water5 C flour2 C corn meal2 Tbsp5 Tbsp olive oil

Recipe:1. Dissolve yeast in warm water
