Ingredients: 2 C gluten free rice flour mix 1 tsp xanthan gum1 C sugar2 tsp baking powder1/2 tsp salt (mix together dry ingredients and set aside) 1 tsp vanilla extract1 Tbsp shortening, melted (or oil)3/4 C milk2 eggs (combine thoroughly) Directions: 1. Add dry ingredients into wet ingredients.2. Lightly spray donut trays with non-stick spray.3. Pour mixture into pans so they are about 3/4 filled4. These waffles use Sue Gregg’s Blender Waffle/Pancake batter as the base. Having most of the prep work done in the evening makes these waffles quick and easy in the morning. Growing up, my mom would make us this delicious meal. She never had a recipe, so I had to go hunting for something that was similar to her recipe. With a little tweaking, I turned that recipe into a yummy gluten free treat.
