A Special Treat from My Daughter

Munchkin wanted to do something special for my birthday. Normally, I make the cake/cupcakes/cheesecake/pie for birthdays either by myself or with a little assistance from Munchkin. This year, she decided that she wanted to do it all by herself. One of the things that we’re currently working on in our home is learning more traditional baking and cooking skills. While I do know some about preserving, I thought it would be nice to jump into learning more skills such as yogurt making, sour dough baking, and creating homemade treats for the pups. I wanted to try a different dessert that wouldn’t feel heavy, but would taste delicious.  I wasn’t sure how Munchkin would feel about it since she’s not really big on coconut, but it turns out that she enjoyed it. Gluten Free Coconut Cake Recipe Ingredients: 1 gluten free yellow cake* 1 cup coconut milk 2 Tbsp honey 1 1/2 cup heavy whipping cream 1/4 cup powdered sugar 1 tsp pure vanilla extract 1 cup unsweetened shredded coconut, toasted Directions: Poke holes in cooled yellow cake (still in pan). Project 365 – #183 I’ve seen these called Brazilian Cheese Puffs, but I made ours a little differently than the traditional cheese puffs.  These are naturally gluten free due to the ingredients.  I love how quick and easy these are to make. Project 365 – #164 We received some gluten free mixes from Betty Crocker as part of the Gluten Freely Bakers Challenge that a wrote about last month, so I decided to doctor up one of the brownie mixes.  With the gluten free Betty Crocker brownie mix, you need to up the butter to between 3/4 cup and 1 cup if you want a nice fudgie brownie.  (The recipe on the box calls for 1/2 cup.)  Other than that, make the mix as directed and put in greased pan.
