Gluten Free Oatmeal Raisin Cookies

Posted in Gluten Free

I’ll be the first to admit that cookies are a real weakness for me. The store bought cookies aren’t as tempting, but cookies fresh from the oven… Those cookies can’t be beat. Lately, I’ve been craving some of my gluten free oatmeal raisin cookies, but it’s been so busy around here that I’m just now getting around to baking them. They are gluten free and dairy-free. You can use sunbutter if you need a nut-free alternative. This recipe is kid-friendly and approved.…

Knowing that muffins make a quick and easy on-the-go breakfast, I went ahead and made a double batch, so I could freeze some for later. I like to freeze them individually, so we can just grab a muffin or two as needed. I thought it would be nice to try to make a healthier version of an old favorite. Of course, it would have worked a little better if I would have realized that I didn’t have any eggs. lol! I made them…
