Frozen Assets — Mashed Potatoes

We love mashed potatoes around our house, and I don’t really care to make them from scratch every time we want them. BUT, I prefer homemade (plus they’re really inexpensive to make). So, once again, I go back to my freezer. I peel, cook, and mash between 5 and 10 lbs of potatoes at a time. Then, I put them in microwave safe freezer containers (Tupperware Rock ‘n Serve). My little girl was still sick today. I think she’s actually getting worse instead of better. Today, she’s added a cough in addition to the stuffy head and ear ache. Yuck! What are frozen assets? Frozen assets are meals, baked goods, or other things that you prepare ahead of time and put in the freezer. Today, I’ll tell you some of the things that I do for my husband’s lunch. I’m going to be honest and say that I’m not getting up when he gets up, but I still want to prepare good lunches for him to take to work with him. Well, my little girl is still sick, so we didn’t get as much done as planned. I did run her over to Pizza Hut to redeem her Book It! certificate at Pizza Hut. (You know, earn free personal pan pizza for reading a certain number of books during the month.) We also picked up a few things from freecycle. 5 HUGE (50 envelopes each) boxes of hot chocolate and a wood/canvas laundry sorter for Michelle’s room. Gotta love freebies!
