Flourless Smore Cookies

Fall is here which means I can turn on the oven without feeling like we’re roasting in the house. I decided to play around with my basic flourless peanut butter cookie recipe to create flourless smore cookies. I was craving the taste of smores. Since we couldn’t have an open fire and roast smores, this seemed like a good alternative. Cooler weather calls out for hot, fresh baked goods, and these tasty cookies are easy to make and delicious. A Special Treat from My Daughter

Munchkin wanted to do something special for my birthday. Normally, I make the cake/cupcakes/cheesecake/pie for birthdays either by myself or with a little assistance from Munchkin. This year, she decided that she wanted to do it all by herself. Other than asking a question here or there, she was able to make the gluten free marble cupcakes and homemade peanut butter buttercream frosting completely by herself. Fall Festival at the Ranch

This month’s community outreach for the horse rescue was a fall festival where the kids could go trick-or-treating on horseback. It was a unique opportunity that was a big hit for both the regulars at the ranch as well as kids from the community. Another fun activity was a costume contest for both people and their horses. On Tuesday, I received a text message from Munchkin’s best friend’s mom (who, for now, lives in North Carolina). They were heading through our neck of the woods after visiting with family, and there was the possibility that we would be able to meet up. A Brand New Experience: Animal Handling

On Monday, it was confirmed the some of the rescue horses from the ranch would be used in a music video that was being shot on Tuesday. I was asked to haul the horses since I have the truck that can pull the horse trailer while fully loaded.
