Saying Goodbye to Zion

Zion came to the rescue with Dixie (Munchkin’s foster horse) and Gypsy. He had some health issues, but we didn’t realize how bad until today. Zion pretty much become my horse since he came into the rescue that day a little over two weeks ago. We really bonded as I took care of him. I was even able to ride him on Tuesday. Today was quite the interesting day which involved a “field trip” to a local vet to have Dixie’s tumor removed from her leg. Please note: some of this images may be disturbing to some people. Gluten Free Pumpkin Nut Muffins

For some reason, I was craving something pumpkin yesterday, so I decided to make some pumpkin muffins. Knowing that muffins make a quick and easy on-the-go breakfast, I went ahead and made a double batch, so I could freeze some for later. I like to freeze them individually, so we can just grab a muffin or two as needed. I thought it would be nice to try to make a healthier version of an old favorite. While Munchkin has been doing some school the last few weeks, it hasn’t been the full load of classes. Today, we’re officially starting our 9th year of homeschooling only it’s starting off a little differently due to our new volunteer work at the horse rescue. Our new school day will also look different as school work will be done after we get home from the stables. Our curriculum is similar to what we used last year with a few changes. Omelet Muffins

Now that we’re heading over to the ranch in the morning on most days of the week, I find that we need something fast and easy for breakfast. Muffins are always a favorite, so I decided to make a twist on traditional muffins. The result was an omelet muffin that could be made ahead and stored in the fridge for approximately 3 days. The omelet muffins can be easily personalized for different tastes and/or food allergies. It’s also a good way to use up extra veggies and/or meat that’s in the fridge.
