Gluten Free Cranberry Macadamia Nut White Chocolates

I admit that I have a fondness for white chocolate even though I know it’s not the healthiest of treats. I rarely eat it which makes these treats extra special. I found some white chocolate chips inexpensively on Saturday, so I snagged a couple of bags. I decided to make these treats with some leftover dried cranberries and macadamia nuts that I had on hand. The measurements are approximate as I just added ingredients until I liked the results.

Ingredients:

  • 2 cups white chocolate chips
  • 1/2 – 1 cup dried cranberries
  • 1/2 – 1 cup chopped macadamia nuts
  • 1/2 tsp. coconut oil

Directions:

  1. Heat chocolate chips and coconut oil in microwave for 1 minutes. Stir. Keep microwaving at 30 second intervals until melted and creamy. (You could also melt over a double-boiler if you don’t want to use a microwave.)
  2. Stir in macadamia nuts and dried cranberries.
  3. Place chocolate mixture in desired size “mounds” on parchment lined cookie sheets.
  4. Set aside in cool area to allow to firm up. Store in airtight container.

Notes:

  • If you want a more refined look for these, just place the chocolate mixture into candy molds.
  • Use other types of dried fruits or nuts for a different flavor profile. These taste yummy with dried cherries and pecans.
