The Epic Cream Sauce Failure

Okay, so that’s a slight exaggeration, but it was a time consuming failure.  Let me step back in time for a moment…

This evening, I decided that I’d make some Mexican chicken with a lovely cream sauce served with peas.  I put the cast iron skillet on the burner to get it nice and hot as I wanted a nice sear on the chicken.  As I waited for the pan to heat up, I started dicing onions and green peppers.  The boneless, skinless chicken breasts sizzled as I placed them into the hot skillet.  I turned down the heat and sprinkled the chicken breasts with Mexican seasoning, flipped them over, and sprinkled seasoning on the other side.

As I placed another skillet on top of my main skillet to act as a lid, I heard D call out, “it’s starting to smell really good in here!”  The smell of Mexican chicken was starting to fill the air.  Mmmm….  I tossed the onions and green peppers into the skillet, and put the “lid” back on the pan.  A few minutes later, I added some water to the hot skillet to create some steam to keep the chicken nice and moist.

Once the chicken was cooked, I removed it from the pan and started to make the sauce.  I added some milk and sour cream, a little black pepper, a sprinkle of Mexican seasoning.  A little taste test confirmed that the flavor was delicious.  I just needed to add a little tapioca starch to thicken up the sauce.  I started whisking in the tapioca starch then oops!   A big poof of tapioca starch found it’s way to my beautiful sauce.  Immediately, the texture changed into something rather disgusting.  **pout**

Oh well….  Thankfully, we ended up with a nice chicken dinner.  It was just missing the epic failure cream sauce.  The sauce did end up being an interesting topic of conversation.  lol!
