First Breadmaking Attempt: Herb Bread

Seeing how I’m still battling with a stomach bug, Munchkin decided that she would step up and help me get started on some of the Thanksgiving preparations.  Since we’re gluten free, part of the process is making bread for the express purpose of making stuffing/dressing.  The bread needs to sit and get a little stale prior to making the stuffing/dressing, so we needed to get started on the process today.

Munchkin decided that she would like to learn how to make gluten free bread.  The nice thing about gluten free bread is that you don’t have to concern yourself with the whole kneading and developing the gluten thing.  I pulled out the gluten free multi-grain sandwich roll recipe for her to use with a few modifications.

Gluten Free Herb Bread Cubes

Gluten Free Herb Bread Recipe

Ingredients:

  • 1/4 C Teff flour
  • 1/4 C Brown Rice flour
  • 1/4 C Amaranth flour
  • 3/4 C Potato starch
  • 3/4 C Tapioca starch
  • 1 Tbsp Xanthum gum
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1 tsp dill
  • 1 tsp oregano
  • 2 Tbsp sugar
  • 2 1/2 tsp bread yeast
  • 3 Tbsp olive or coconut oil
  • 1 C warm water
  • 1 egg (room temperature)
  • 1 egg white (room temperature)

Directions:

  1. Sift and combine dry ingredients in large mixing bowl.
  2. Combine together wet ingredients.
  3. Turn on mixer and slowly add wet ingredients to dry ingredients.  (You may need less water if you’re in a high humidity area.)
  4. Mix and medium speed for 2-3 minutes.  Dough will be sticky.
  5. Prepare 1 lb. loaf pan and put dough in pan.  Wet fingers and smooth the top of the bread dough.
  6. Cover the loaf loosely and allow to rise until the dough rises to the top of the pan (25-30 minutes usually)
  7. Preheat oven to 375 degrees F.  Place uncovered bread pan in the oven and bake for approximately 30 minutes.  (The top of the bread loaf will be golden brown.)
  8. Remove from pan and cool on cooling rack.

Munchkin did a great job with the bread.  It smelled wonderful while cooking, and it was not dense when sliced. Since we are making stuffing/dressing from this bread, we sliced the bread and diced into small cubes.  We’re now allowing the bread to dry out.

Of course, Munchkin had to enjoy a slice of bread and butter prior to us cubing the bread.  She was very proud of her first bread making attempt.  I was very grateful for her help.

  2. This sounds yummy! I think we need to do a bit of gluten free cooking around here. Before my daughter was diagnosed with Type 1 Diabetes, she was diagnosed with Celiac. Then later, a different doctor claimed she didn’t after all….Maybe she and I would both feel better, gluten free….;-)
