Parmesan Crusted Chicken Nuggets

Gluten Free Parmesan Crusted Chicken Nuggets Recipe

These delicious, bite-sized morsels are another one of my throw together recipes.  If you start out with slightly frozen chicken, it is easier to cut the chicken breasts into bite-size cubes.  All measurements are approximate.

Ingredients:

  • 3 Boneless, skinless chicken breasts
  • 1 Cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp dill
  • 1 tsp dried oregano

Directions:

  1. Start heating cast iron skillet on stove
  2. Cut chicken breasts into bite-sized pieces, try to keep the pieces uniform
  3. Combine Parmesan cheese, garlic powder, and oregano in a Ziploc bag
  4. Add chicken to Ziploc bag, toss to coat thoroughly
  5. Place the chicken nuggets on the hot, cast iron skillet
  6. Turn nuggets to brown all sides evenly.
  7. Turn down heat and cook until chicken is cooked through

  2. Yum! These sound yummy. Do you use freshly grated parmesan or the stuff in the container?

    • I use whatever I have on hand. While I prefer the freshly grated, it’s not always in the budget or available.

    YUM YUM YUM!!!! I copied this to my file & will be trying these out! MY friends little girl has just been diagnosed with Autism & her physician has suggested that she go on a gluten free diet.     These look amazing! Do they actually have an outside that is crispy? I tried rice “bread” crumbs and ended up with a soggy mess..
