In the Kitchen: OAMC Part 1

My March Once A Month Cooking (OAMC) has begun.  I do mine a little differently than many people.  I tend to get things done over a series of several days.

What I’ve done so far:

  • 25 lbs of boneless, skinless chicken breasts have been vacuum sealed and placed in freezer.  (half with seasoning, half without)
  • 10 lbs of ground turkey have been divided into 1 lb vacuum sealed packages and placed in freezer.  (still need to purchase more ground turkey)
  • 5 quart sized bags of gluten free blueberry granola have been made (based on OAMM Crystal’s Lazy Granola recipe)
  • 2 casserole dishes of gluten free baked mac ‘n cheese have been made and placed in freezer
  • 1 casserole dish of gluten free pasta bake has been made and placed in freezer
  • 1 casserole dish of Mexican pasta bake has been made, but didn’t make it to the freezer…

On the menu to be made today:

On a side note, my fridge is full right now because we found some great deals at Fry’s (Kroger) on Monday night.  We were able to get cage free brown eggs for only 50 cents a dozen, so I stocked up.  D was cracking up as I went and grabbed a cart for our great finds.  We also picked up 2 cartons of orange juice and 2 half gallons of organic milk for 99 cents each.

Munchkin is looking forward to having some frozen orange juice pops.  We found several other good markdowns and took advantage of them.
