Grapefruit & Prickly Pear Roast Chicken

Ingredients:

  • 3 large boneless, skinless chicken breasts
  • 1/2 tsp minced garlic
  • 2 Tbsp Prickly Pear sauce
  • 1 large grapefruit, juiced

Directions:

  1. Combine grapefruit juice, prickly pear sauce, and minced garlic.
  2. Place chicken breasts in a baking dish.  Pour sauce over chicken breasts.
  3. Cover with plastic wrap and refrigerate for a few hours.
  4. Place baking dish in oven and turn oven to 400 degrees F.  Bake for approximately 40-45 minutes or until internal temperature reaches 165 degrees F.

    • Not a silly question at all. 🙂 I have not made my own yet, but that is on my “to learn” list.

      I had prickly pear sauce for the first time many years ago while my family was visiting Arizona on vacation, but I had forgotten all about it until we moved here (Arizona) this past summer.
