Gluten Free Snickerdoodles

Gluten Free Snickerdoodles

Ingredients:

  • 1/2 C butter
  • 3 Tbsp cream cheese, softened
  • 3 Tbsp sour cream
  • 1/2 tsp pure vanilla
  • 1 C sugar
  • 1 egg
  • 1 1/2 C gluten free flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp xanthan gum
  • Cinnamon sugar mixture (5 Tbsp sugar, 5 tsp cinnamon)

Directions:

  1. Mix together gluten free flour, baking soda, baking powder, and xanthan gum.
  2. In separate bowl, cream together cream cheese, sour cream, and sugar.  Beat until light and fluffy.
  3. Add in egg and vanilla extract.
  4. Slowly add in the flour mixture until thoroughly mixed.  This will be a soft, slightly sticky dough.
  5. Swirl in some of the cinnamon sugar mix.
  6. Drop by tablespoonfuls on cookie sheet about 2 inches apart. Sprinkle with cinnamon sugar mixture
  7. Bake for 8-10 minutes at 350 degrees F.  Edges will be golden brown.  Do not over bake!
  8. Allow to cool slightly on cookie sheet.  Move to cooling rack to cool completely.
