Gluten Free Spaghetti, Meatballs, & Cheesy Garlic Bread

Spaghetti and Meatballs

Munchkin really likes spaghetti and meatballs.  Add some cheesy garlic bread — well, then she’s just as happy as can be.  When I presented her with her with this platter, she just grinned and couldn’t wait to eat.

Ingredients:

  • 1 lb. ground turkey/chicken
  • 2 Tbsp brown sugar
  • 1/4 C gf rolled oats
  • 3 Tbsp dried diced onion (or small fresh onion finely diced)
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1-2 Tbsp ground flaxseed meal

Directions:

  1. Preheat oven to 350 degrees
  2. Combine all ingredients until thoroughly mixed
  3. Roll into golf ball sized balls and placed in baking dish
  4. Cook for 30 minutes at 350
  5. Remove from oven and pour sauce over meatballs.
  6. Place back in oven for 30 minutes.
  7. Remove from oven and serve over your favorite pasta

We like to use Tinkyada spaghetti as we’ve found it has the best flavor and texture for gluten free pasta.  You can find my every day bread recipe here.  I spread butter on the bread slices, sprinkle with garlic powder, and sprinkle mozzarella cheese on top. I toast for approximately 10 minutes while the pasta is cooking.
