Mexican Lasagna

Lasagna with a Mexican Twist…  We really enjoy the flavor of Mexican food, so I came up with this recipe to use up some ingredients that we had on hand.

Ingredients:
1-2 C your favorite cheese*
1 can of refried beans, ground chick peas, or ground pinto beans
1-2 C seasoned, browned ground chicken**
4-6 black olives, sliced (optional)
Taco Sauce
Corn Tortillas

Directions:

  1. Preheat oven to 350 degrees F
  2. Place tortillas on bottom of baking dish
  3. Top tortillas with seasoned, browned ground chicken
  4. Place another layer of tortillas on top of the chicken
  5. Spread a layer of beans on the tortillas
  6. Pour a light layer of taco sauce on the beans
  7. Top with cheese & black olives (if desired)
  8. Place in oven and bake until cheese is melted, bubbly

Serve with…
sour cream
salsa
tomatoes
green peppers
onions
jalepenos

*I usually use a mixture of pepper jack and monterey cheese.
**I add onion, cumin, chili powder, cayenne pepper (or just taco seasoning) to my ground meat.
