Gluten Free Tortilla Crusted Chicken Nuggets

Munchkin has really missed chicken nuggets, so I needed to find a fast, easy recipe to satisfy her craving…

Ingredients:
6 oz of your favorite tortilla chips (zesty is good for more flavor)
1/2 C grated Parmesan cheese
1 egg
1 1/2 lbs of skinless, boneless chicken (cut into pieces)

Directions:

1. Preheat oven to 400 degrees.
2. Crush tortilla chips until coarsely ground (can put in food processor)
3. Combine with Parmesan cheese
4. In a different bowl, beat egg with 1 tsp water (or milk)
5. Dip chicken pieces in egg then in tortilla mixture
6. Place on greased or lined cookie sheet
7. Bake until cooked through (10 – 12 minutes)
8. Serve with your favorite dipping sauce
