Gluten Free Chocolate Chip Cookies

I have to admit that I’m particularly proud of this recipe because it’s the first gluten free recipe that I’ve created from scratch myself. It turned out well and you can’t tell that the cookies are gluten free. Yum!

Gluten Free Chocolate Chip Cookies

Ingredients:

¾ C Crisco
1 ¼ C light brown sugar
2 Tbsp milk
1 Tbsp vanilla
1 Egg
¾ C brown rice flour
¾ C white rice flour
¼ C tapioca flour
½ tsp xanthum gum
1 tsp salt
¾ tsp baking soda
1 ½ C chocolate chips

Directions:

1.Preheat oven to 375 degrees F.
2.Cream together Crisco, sugar, milk, and vanilla
3.Beat in egg until fluffy
4.Combine flours, xanthum gum, salt and baking soda in different bowl
5.Beat flour mixture into the sugar mixture at low speed until thoroughly combined
6.Stir in chocolate chips
7.Drop by rounded Tablespoonfuls onto ungreased cookie sheet
8.Bake for 8-9 minutes for chewy cookies or 11-13 minutes for crispy cookies
9.Remove and cool on baking rack

    Bob’s Red Mill makes an excellent GF Chocolate Chip cookie mix. Did I miss something? When did you guys go GF?? Are you also casein free? 🙂 Take care my friend! 🙂 I will be praying for your family. I know how hard deployment can be.

    Paula, we’ve been gluten free for a little over a month. We’re not casein free. I’m trying to stay away from the already prepared mixes as they’re pretty costly. Our budget is pretty tight right now.
