Mexican Bake

This can also be made in the crockpot for those days that you’re on the go and want to have a delicious dish to come home to.

Ingredients:

1 lb ground beef
1 C salsa
1/2 cup mayo
2 tsp chili powder
2 C crushed tortilla chips
1 C shredded Colby cheese (or use your favorite cheese)
1 C shredded Monterey Jack cheese (or use your favorite cheese)
1 medium tomato, chopped
2 C shredded lettuce
Sour Cream

Recipe:

1. Brown ground beef, drain. (I like to add sauteed onions & green peppers to the beef)
2. Add salsa, mayo, and chili powder.
3. In an ungreased 2-quart baking dish, layer half of the meat mixture, chips, and cheeses.
4. Repeat layers.
5. Bake uncovered at 350 F for 20-25 minutes or until heated through.
6. Just before serving top with tomato, lettuce, and sour cream.

Variation: Instead of chips, you can use gluten free tortillas. Just layer tortillas, beef mixture, and cheeses. If you like beans, you can also add a layer of beans (or use beans instead of beef).
