Recipe of the Week — Breakfast Burritos

I’m going to try to start posting a recipe each week that we really enjoy. Notice I said try. lol! πŸ˜‰

As some of you know, I’m really big into freezer cooking or plan ahead cooking. One of the things that I like to do it prepare breakfast meals ahead of time for D. It’s helps him out when he’s running slow in the morning or just wants something different. Here’s one of the recipes that I make in advance and put in the freezer for him.

Breakfast Burritos

12 eggs, beaten
1 lb sausage, browned
1/2 C chunky salsa
2 C shredded cheese (I usually use cheddar)
24 flour tortillas

Scramble your eggs. Stir in browned sausage and salsa. Warm tortillas in microwave for 20-30 seconds to soften. Place approximately 1/2 C egg mixture in each tortilla and sprinkle with cheese (you may also decide to just add the cheese into the egg mixture to save on time). Roll the tortilla burrito style. If you’re going to eat them right away, skip this next step. Wrap each burrito in plastic-wrap and then in aluminum foil. I allow to cool for a few minutes and then place into freezer. I usually make labels on the computer (address labels) that state what is inside and it also says made with love or something like that. πŸ˜‰ Oh, I also state how long to heat it — between 1 and 2 minutes in the microwave.
